Where a dish is culturally critical but commercially unviable – no queue, no goodwill, no successor economics – there is nothing for a mortgage to finance. These masters receive the full Fellowship, the documentation, and the archive placement, funded by philanthropy – and, where Government chooses to join, public heritage funding – without apology. This is the honest boundary of the self-financing principle: the business carries succession where a business exists; the endowment carries memory where it does not.
