PROLOGUEBefore the City Wakes

4.50 A.M.

The centre is dark except for one tube light and the blue ring of a burner. Ah Kow has worked this kway chap stall since before the flats upstairs were built. His stock has been on the fire for an hour: dark soy and spice in the order his father used, offal cleaned and blanched to a rhythm nobody has ever put on paper, the kway lifted out when it feels right to his hand rather than to a timer. By seven the line will reach past the drinks stall; by two, four hundred plates will have gone out; by three he will be prepping for a tomorrow he no longer has many of. The tenancy runs out next week. Neither of his children wants the wok. Word has got round, and old customers are turning up for what they suspect is a farewell plate (a few of them twice a day).

A few rows away, John cooks the same dish. He queued at Ah Kow's stall as a schoolboy and would like to be worthy of it; for now his base comes from a central kitchen, his stock tastes of something else, and his kway is still a few seconds early or late. Money at home is tight, with a baby to raise and parents who need looking after, so paying a helper is out of the question: he opens before dawn, cooks single-handed and pulls down the shutter by mid-afternoon to take his turn at home. He knows exactly what people say when they set his bowl beside the old man's.

If Ah Kow simply stops, what he knows stops with him, and no register anywhere will note that it is gone. The stall will be re-let. The line will re-form somewhere else. The centre will look as busy as ever. I have come to believe that this is how a food heritage is really lost: not in an empty building, but in a crowded one. (The companion essay tells their story more fully, and asks the questions; this paper tries out some answers.)

I wrote this paper hoping that the next Ah Kow retires differently – with a successor he trained himself, paying him for the business he built, under a name his family keeps a stake in – and that the next John starts differently: mentored by the master two stalls down, financed, relieved, with a floor under his first two years.

This is a working paper for public discussion. Every number in it is an invitation to improve it. Corrections and better data are welcome.
