D.12Learning at the Master's Side

D.12 Learning at the Master's Side: table 1
What it doesApprentices learn at the master's own stall. Each written recipe is tested by a relief cook on the master's relief day. Blind tastings are held in partner kitchens booked by the session. Nothing is built (D.18). Its only costs are a one-off second-station grant at each new Fellow's stall and the kitchen sessions, both in the programme budget (the Budget Book, B.1).
DialsThe second-station grant, about $3,000 a Fellowship; the kitchen sessions, about 24 a centre a year at about $300 (D.18, the Budget Book, B.1). Both grow only with the Fellowships and the centres, five at most before the tests of the Plan, §6.5.
