§3.6

Endangered Dish Registry

A ranked register of endangered hawker dishes, kept with the National Heritage Board and communities, filling the list Government confirmed it lacks.

Dishes are ranked by practitioner count and age, technique complexity and cultural significance; fragility and cultural weight set rescue priority, and popularity never gates rescue. Commercially marginal dishes such as Eurasian curry debal, fully hand-made Hakka yong tau foo, complex Peranakan rempah work and endangered kueh enter through the grant track. Prevalence is judged with the communities concerned, and hawkers and their communities, not officials or queue length, judge what counts. It is the dish-level second layer of §3.6: every stall on the Regulars' List has a page in it, in its regulars' own words, and diners who name what they would save add to it; its open test of fragility decides when a Fellowship is offered. It answers MCCY's 7 October 2026 reply that the Government keeps no such list.

Who pays

The library gives this mechanism no who-pays tag of its own.

What it builds on

None: MCCY confirmed on 7 Oct 2026 that the Government does not maintain a list of hawker trades or culinary practices at risk (§1.1).
