Market transparency
The independent evaluator publishes quarterly aggregate data on stall revenues, ingredient prices, costs and turnover, never identifying any stall.
- INDEPENDENTLY PUBLISHED
Reports cover stall revenue ranges by dish category, ingredient price indices, cleaning and utility cost benchmarks and turnover rates. They are compiled by the independent evaluator, not the programme, so the market's data and the institution's report card stay in separate hands. Voluntary revenue reporting is compensated at $25 a quarter. Follow the Plate (D.8) specifies twenty-one indicators and a yearly Plate Ledger for it to publish. Its first stall-level numbers come from the Year 0 stall baseline at the pilot centres, published only by dish type and centre (§6.1).
