Graduation validation
Apprentices graduate on two keys: a Taste Council verdict of at least 'Yes – worthy of the name' and a four-week public trial rated 4.2/5+.
The Taste Council verdict covers the full documented menu, and the four-week public service trial at the master's stall, on his relief days, must sustain a customer rating of at least 4.2/5 from voluntary feedback cards. The same test is applied only to volunteers who sought the standard, never to working stallholders.
Who pays
The library gives this mechanism no who-pays tag of its own.
